When I found out I had to go Gluten Free one of the hardest things was what to do about stuffing. If I made it from gluten free bread well that could get a little pricey and I like to have stuffing when ever I put a chicken into roast. Then I found Quinoa one of the healthiest grains you can buy and soon after came up with what is now one of my family’s favorite stuffing. Everyone who tries it raves about it. So give it a go I’m sure your family will love it’s nutty flavor. Scroll to the bottom of the page to print out the recipe.

The first thing you will want to do is get your Quinoa simmering in the chicken broth with your spices and while that is cooking saute your onions, celery and pine nuts in a little olive oil over low heat.

You will want to combine your cooked quinoa with your pine nuts and then throw in your cranberries. You can then serve it like this or go ahead and stuff a turkey with it.

Gluten Free Pine Nut Quinoa Stuffing

Ingredients

  • 1 cup uncooked quinoa
  • 1/2 cup shelled pine nuts
  • 1 cup dried cranberries
  • Juice from 1 orange
  • 1 tablespoon of orange rind
  • 2 tablespoons olive oil, divided
  • 2 cups gluten free chicken broth
  • 1/2 tsp salt
  • 1/2 tsp sage
  • 1 1/2 tsp Italian seasoning
  • 1/4 tsp pepper
  • 1/4 cup chopped green onion or leeks
  • 1/2 cup diced celery
  • 4 ounces organic chopped mushrooms

Instructions

  1. Rinse quinoa under cold water. Drain
  2. Heat 1 tbsp of olive oil in medium saucepan. Add quinoa; stir until coated. Add broth and seasonings. Reduce heat to low and simmer for 20 minutes. Remove from heat
  3. While quinoa is cooking heat remaining oil in skillet add mushrooms, onions, celery & pine nuts. Cook until vegetables are tender. About 5 minutes.
  4. . Stir together quinoa, vegetables and add cranberries, orange juice & orange rind. Serve or stuff turkey or chicken.
