When I found out I had to go Gluten Free one of the hardest things was what to do about stuffing. If I made it from gluten free bread well that could get a little pricey and I like to have stuffing when ever I put a chicken into roast. Then I found Quinoa one of the healthiest grains you can buy and soon after came up with what is now one of my family’s favorite stuffing. Everyone who tries it raves about it. The first thing you will want to do is get your Quinoa simmering in the chicken broth with your spices and while that is cooking saute your onions, celery and pine nuts in a little olive oil over low heat.
You will want to combine your cooked quinoa with your pine nuts and then throw in your cranberries. You can then serve it like this or go ahead and stuff a turkey with it.
A stuffed turkey looks wonderful with the pine nut quinoa stuffing.
