Gluten Free Pumpkin Cheesecake Bars

As the last days of summer start to fade I start dreaming of fall leaves, masquerade balls and pumpkin pie so what better way to celebrate the upcoming bountiful season than with a Gluten Free Pumpkin Cheesecake Bars recipe for all my friends & family.

This recipe is pretty easy to make and takes no time at all to prepare and it’s melt in your mouth texture will not give away a clue that it’s gluten free. If you can’t handle dairy you can also find cream cheese substitutes at your local natural food stores. So lets get started and remember you can always scroll to the bottom and print out the recipe if your in a hurry.

First you will want to make a Gluten Free Graham Cracker Crust
Mix all your dry ingredients:

1 1/4 cup of Gluten Free Graham Cracker Crumbs
1/4 cup granulated sugar
1/4 tsp cinnamon
1/4 tsp ginger
1/8 tsp cloves

Dry Ingredients for GF Graham Cracker Crust

Next add 6 Tablespoons of melted butter

Mixing GF Graham Cracker Crust

Once mixture is moist press into the bottom of a ungreased brownie size pan with fingers

Now grab your ingredients for the filling
Gluten Free Pumpkin Cheesecake Filling:

2 pkgs cream cheese softened
3/4 cup sugar
2 eggs beaten
1 cup canned pumpkin
1/4 tsp ground cinnamon

Pumpkin Cheesecake Ingredients

Cream together eggs, sugar and cream cheese then add pumpkin and cinnamon

Making Cheesecake Batter

Pour batter onto your graham cracker crust

Pouring Pumpkin Cheesecake

Bake at 350 degrees for 40 minutes or until center is set when touched

Finished GF Pumpkin Cheesecake Bars

Let cool and enjoy with your favorite cup of spiced tea or hot cider for the perfect fall treat

GF Pumpkin Cheesecake Bars

Ingredients

  • Gluten Free Graham Cracker Crust Ingredients
  • 1 1/4 cup gluten free graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp cloves
  • 6 Tbsp melted butter
  • Pumpkin Cheesecake Filling
  • 2 pkgs cream cheese softened
  • 3/4 cup sugar
  • 2 eggs beaten
  • 1 cup canned pumpkin
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat oven to 350 degrees
  2. Combine dry ingredients for graham cracker crust in medium size bowl
  3. Add melted butter and stir till moist
  4. Press mixture into bottom of ungreased brownie size pan with fingers
  5. Sit aside
  6. Mix sugar, eggs and cream cheese on low speed with mixture in medium size bowl
  7. Add pumpkin and cinnamon mix until blended well
  8. Pour mixture over graham cracker crust in pan
  9. Bake 40 minutes or until center is set
